Grenadian Peanut Snow-Ice
For as long as I can remember, this frozen flavored drink was a refresher and cooling for everyone. As the school bell rang, we will rush from school to the closest village shop to purchase a “snow ice” or “pennacool” to beat the hot sun as we worked miles to our home. There was all sorts of flavors: custard, flavor-aid/kool aid and of course peanut (one of my favorites).
This brings back remembers of my childhood and I hope it creates new memories with your families when you try this recipe.
Ingredients:
- 1 14oz tin sweetened condensed milk
- 1 12oz tin evaporated milk or whole milk
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- ½ tsp cinnamon powder
- ¼ tsp ground nutmeg
- ½ cup water (to loosen if mixture too thick)
Instructions:
- In a medium pot or sauce pan, put peanut butter, milk and spices on medium-high heat
- Use a wooden spoon or whisk to stir making sure the peanut almost dissolves
- Remove pot from heat add sweetened condensed milk, vanilla extract and mix until smooth (Nb. Add water if too thick)
- Leave to cool and in sandwich plastic bags, pour about 1 cup of the final mixture into the bag a tie tightly
- Freeze for at least 6 hours before you serve
