Guava Cheese

Guava Cheese has been one of the delicious local candies made in Grenada. It is made from a local fruit called Guava and it is used to make other products such as jams/jellies, various drinks and more. Frankly, I believe it was one of the ways our parents got us to consume the fruit. Traditionally this candy making process has proven to be quite tedious. However, this recipe is a short-cut to the original. Hope you enjoy!

 

Ingredients:

  • 14 oz bag Guava paste
  • 2 tbsp granulated white sugar
  • 2-3 tbsp water

 

Instructions:

 

  • In a medium size pot, put all ingredients except water

  • Turn on heat to medium-low and slowly add water to loosen the paste
  • Use a wooden to stir and when guava mixture starts to stick to the spoon, place a dish or cookie sheet to pour

  • Text to see if guava cheese is ready by pouring some of the mixture in a cup of water and feel for a gelatinous texture

  • Pour mixture in the prepared dish and leave to set for at least 15 mins

  • score with a knife and coat in sugar before eating

Groundnut Sugar cake for me is my most favorite island candy of all time. This decadence, made with sugar and ginger, was the perfect afternoon snack. I remember my mom running me from the kitchen for fear that I would have consumed the majority of what was on the tray before packaging. I didn’t see the big deal of why she was worried because I was the one to go around the market square and sell the products and I knew the revenue from the sales will still be high (even though everything in my basket was only $1.00 EC each). I hope you can take this recipe and make it a family favorite too.

 

Ingredients:

  • 1 lb peanuts (baked and shelled)
  • 1-½ cups sugar
  • 1 head fresh ginger grated (NB. use 2-3 tsp ginger powder if you don’t have fresh ginger)
  • ¼- ½ cup water

 

Instructions:

  • In a medium size pot put sugar, ginger and water to boil
  • Reduce heat to a simmer and use a wooden spoon to stir so that the sugar dissolves evenly
  • After 15 minutes, the mixture will turn to a syrupy texture and thicken

  • Remove from heat and quickly pour over nuts and mix vigorously
  • Pour on a cookie sheet to cool and set; break into pieces before serving

  1. If you prefer, use a spoon and put down into clumps or balls

My house growing up was the house of candies. My mom made everything from sugarcake to fudge and everything in between. I was that kid who loved to scrap the bottom of the pot, edges and spoon for leftovers. Hope you enjoy this recipe!

Ingredients:

  • 1 tin (12 oz) evaporated milk (or 1 14 oz tin sweetened condensed milk)
  • 2 cups white granulated sugar ( 1 cup sugar if sweetened milk is used)
  • 1 stick cinnamon
  • 1 tsp vanilla essence/extract
  • ¼ cup melted butter (optional or use with sweetened milk)

 

Instructions:

 

 

  • In a large pot, combine all ingredients except vanilla extract

  • Place pot on medium-high and bring to a boil
  • Reduce heat to medium-low, stir (with a wooden spoon) to avoid burning
  • Look to see when the edges of the pot hardens or simply test in one cup water to feel if mixture firms up

  • Remove from heat, stir in vanilla extract and pour mixture in 8”x8” pan or on a cookie sheet

  • As it sets, cut the fudge in cubes and leave to finish cooling then serve
